Ring of Cheesy Spinach Ricotta Goodness

Ingredients * Sliced fresh cheese (provlone or havarti) * 1 lb spinach (cooked and squeezed dry) (or ~12 oz frozen, thawed and squeezed dry) * 2 cups ricotta cheese * 3 large eggs * ½ cup grated Parmesan * Pinch of salt, pepper and garlic powder * bread crumbs or grated Parmesan

  1. Preheat oven to 350. Grease a small bundt pan and line the bottom with overlapping slices of cheese.
  2. In a bowl, mix spinach, cheeses and spices. Beat 3 eggs and add to the mixture. Combine the eggs first allows for a better integration in the mix
  3. Pour the mixture over the cheese-lined bundt ring. Top the mixutre with bread crumbs or grated parmesan
  4. Bake for 25-30 minutes until set.
  5. Let rest 5-7 minutes before flipping onto a serving platter. Slice and enjoy warm or chilled for nice buffet selection

Variations

This is very good to mix in 1/2 pound of cooked ground sausage with the spinach for a complete brunch choice

Embed cherry or grape tomatoes in the pour spinach mixture before topping with the bread crumbs.

Substitute cottage cheese for some or all the ricotta for a higher protein content
