Apple Pie Cookies

Apple pie cookies have all the components of apple pie but in cookie form! This recipe makes a short cut with canned apple pie filling, but by all means if you have fresh crisp apples, brown sugar, etc you can use your favorite homemade apple pie filling recipe. The optional 'a la mode' decoration makes this a great holiday, potluck or entertaining cookie option.

This recipe is a flavorful cookie base, apple pie filling (canned) and an easy streusel topping and optional marscarpone buttercream mock ice cream scoops.

Apple Pie Cookies

Ingredients Cookie

  • 1 cup butter
  • 1 cup light brown sugar
  • ½ cup white sugar
  • 2 large eggs; room temp
  • ½ tsp vanilla
  • 2 T cornstarch
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp salt

Struesel

  • 6 TBL melted butter
  • 1 ¼ cup white flour
  • ½ cup brown sugar
  • ⅓ granulated sugar
  • ¼ tsp salt
  • ½ tsp cinnamon

Mock Ice Cream Scoop

  • 8 oz pkg of Marscapone cheese; room temp
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • optional red cinnamon candy crushed

Cream together butter and sugars until fluffly. Stir in eggs (beaten) and vanilla until combined.

Whish together the dry ingredients in a separate bowl. Then, gradually add the dry ingredients to the wet ingredients until combined, cover and chill for at least 2 hours in the fridge.

For the Struesel, combine flour, sugars, salt and cinnamon in a bowl and then drizzle the melted butter overtop. Toss together til clumpy, don't overmix to a paste.

Preheat the oven to 350

After the dough has chilled. Scoop out about 2T of dough and roll between your palms til smooth. This should make about a 2" disk. Indent the center (back of a spoon or scooper) and spoon in 1 Tbl of filling into each indentation. With some canned filling mixes you might want to more finely chop the apple pieces (depending on brand of filling). You want to get 8-10 apple pieces into each cookie for propotion. Top the apple with 1 1/2 tsp of the struesel, try to mostly cover the filling.

Bake cookies for 13-14 minutes or until the edges turn light golden brown. Let cookies completely cool, they'll be too fragile to handle while warm.

When the cookies are cooled, you can make Marscapone balls. These will look like an a la mode ice cream scoop on you apple pie cookie.

Combine marscapone cheese, vanilla and powered sugar. Scoop out with a small scoop or use the two teaspons method. You can drizzle some crushed red candy to give a hint of cinnamon and add to the colorful appearance of the cookie.

Note. Instead of streusel topping, you can bake with a drizzle of powered sugar/milk glaze or even roll out some thin cookie strip and build a lattice ontop of the apple filling
