Tuna with Canary Islands Red Pepper Sauce

Ingredients
- 2 fresh tuna steaks
- salt
- 3 Tbl Olive oil
- Roasted Spicy Red Peppers (jarred from Amazon), but roasted bell would work too
- 1 tsp smoked paprika (Spainish)
- 1 tsp sweet paprika (Hungarian)
- 3 chopped garlic cloves
- 1 tsp fresh thyme
- 1 Tbl fresh oregano
- 1/2 cup white wine
- 1 Tbl white wine vinegar
- Black pepper
Instructions
Toss the tuna in some salt and set aside
Make the sauce in a food processor. Add everything except the oil and pulse. Then slowing drizzle in about half the oil.
Get a large pan and preheat to very hot. Add the remaining oil olive - don't let it smoke. Pat the tuna steaks dry and add to the hot pan. Quick sear on both sides should take about 2-3 minutes.
