Tuna with Canary Islands Red Pepper Sauce

Ingredients

  • 2 fresh tuna steaks
  • salt
  • 3 Tbl Olive oil
  • Roasted Spicy Red Peppers (jarred from Amazon), but roasted bell would work too
  • 1 tsp smoked paprika (Spainish)
  • 1 tsp sweet paprika (Hungarian)
  • 3 chopped garlic cloves
  • 1 tsp fresh thyme
  • 1 Tbl fresh oregano
  • 1/2 cup white wine
  • 1 Tbl white wine vinegar
  • Black pepper

Instructions

Toss the tuna in some salt and set aside

Make the sauce in a food processor. Add everything except the oil and pulse. Then slowing drizzle in about half the oil.

Get a large pan and preheat to very hot. Add the remaining oil olive - don't let it smoke. Pat the tuna steaks dry and add to the hot pan. Quick sear on both sides should take about 2-3 minutes.
