Slow Cooker assisted French Onion Soup

I made the most amazing French onion soup. The secret? Using my slow cooker.
- 6 large white onions
- 1 glove garlic
- 2-3 chives
- 4-5 cups beef stock
- wine vinegar
white bread and gruyere cheese
The crock pot is going to do all the hard work. Slice the onions and place in the pot on the low setting with the garlic and chives. Season with salt and pepper. Let cook overnight (about 12 hours). In the morning, stir the onions - they should smell wonderful. Add the beef stock and a splash of vinegar. Let this continue to cook about 6-8 hours and your onion soup will be ready.
The final step is to pre-heat your over to 400. In oven proof bowls, dish up a bowl of soup. Top with bread slices and shredded cheese. Bake for 15 minutes. Then switch to your broil and broil for 2 minutes to brown the cheese.
Wonderful, deep, rich onion flavor and you didn't have to be slaved to the stove all day slow cooking the onions.
