Simple Steamed Fish in Oregano/Orange sauce

Freezer Friendly Favorite from Jamie Oliver
4 4-6oz white fish fillets (Frozen is fine)
3 mixed-color peppers
1 large leek
1/2 bunch oregano
1 large juicy orange
red wine vinegar and olive oil
Saute Peppers and Leeks - 10 minutes. Fry, covered to also steam Add filets of fish (cod, etc) Squeeze juice from 1/2 an orange Cover and let cook
Meanwhile, make the sauce.
muiddle oregano and the other half the orange (juiced) and then add a splash of vinegar and oil into a green sauce.
Top the fish with the salsa.
