Keto Zucchini Rollatini – Cheesy, Low-Carb Italian Comfort Food!
Skip the pasta, not the flavor! These zucchini roll-ups are stuffed with creamy ricotta, spinach, and gooey mozzarella—perfect for a guilt-free Italian feast!
Ingredients
2 medium zucchinis (sliced lengthwise into ¼-inch strips)
1 cup ricotta cheese (full-fat for best texture)
1 cup shredded mozzarella cheese (divided)
½ cup grated Parmesan cheese
1 cup fresh spinach (chopped)
1 egg (beaten)
2 cloves garlic (minced)
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 cup sugar-free marinara sauce
Fresh basil (for garnish)
Directions
1️. Prep Zucchini: Slice zucchini into thin strips using a mandoline or sharp knife. Lightly salt and let sit for 10 mins to remove excess water. Pat dry with paper towels.
2️. Make Filling: In a bowl, mix ricotta, ½ cup mozzarella, Parmesan, spinach, egg, garlic, Italian seasoning, salt, and pepper.
3️. Assemble Rollatini: Spread ½ cup marinara in a baking dish. Place 1-2 tbsp filling on each zucchini slice, roll up, and place seam-side down in the dish.
4️. Bake & Serve: Top with remaining marinara and mozzarella. Bake at 375°F (190°C) for 25-30 mins until bubbly and golden. Garnish with fresh basil and serve hot!
