Cottage Cheese Pecan Pie Bars
These soft, nutty pecan pie bars are everything you love about classic pecan pie - just lighter, healthier, and packed with protein. Made with cottage cheese and naturally sweetened, they're perfect for breakfast, snacks, or a better-for-you dessert!
Ingredients (Makes 8 Bars)
- 1 cup cottage cheese (240 g)
- 2 large eggs
- ½ cup almond flour (50 g) (or oat flour for a softer texture)
- 1 tsp vanilla extract (5 ml)
- ½ tsp honey or maple syrup (5-10 ml, optional)
- ¼ cup chopped pecans (30 g), plus extra for topping
- 1 tsp cinnamon (2 g, optional)
- Pinch of salt
Directions
Step 1 Preheat & Prep Preheat oven to 350° F (175° C). Line a small baking pan with parchment paper or lightly grease it.
Step 2 Mix Wet Ingredients In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey (if using) until smooth.
Step 3 Add Dry Ingredients Stir in almond flour, cinnamon, salt, and chopped pecans until fully combined.
Step 4 Bake Pour the batter into the prepared pan and smooth the top. Sprinkle extra pecans on top if desired. Bake for 25-30 minutes, until set and lightly golden.
Step 5 Cool & Slice Let cool completely before slicing into bars for the best texture and clean cuts.
Tips for Success
Blend the cottage cheese for a creamier, pie-like texture. Lightly toast the pecans for a deeper, richer flavor. Add a drizzle of maple syrup or yogurt glaze before serving for extra indulgence.
