Bouneschlupp - Luxembourg's famous soup

Bounschlupp

The famous green bean dish from Luxembourg is Bouneschlupp, a hearty and traditional green bean and potato soup. It is usually cooked with smoked bacon, onions, and often finished with a splash of cream or served with traditional Mettwurscht (smoked sausage).

There is no single way to make classic Luxembourgish Bouneschlupp: some people add a roux to thicken the soup, while others use bacon lardons instead of Mettwurscht.

Ingredients

  • Fresh green beans (cut into bite-sized pieces)
  • Diced potatoes
  • Smoked bacon or lardons
  • 1 bay leaf
  • Savory or dried green herb mix
  • Onions
  • Butter
  • Stock
  • Sliced Mettwurscht (smoked sausage)
  • Whole milk or cream (divided into serving bowls)

Method

Peel and finely chop the onion.

Trim the French beans and cut into bite-sized pieces. Peel the potato and cut into 1 cm cubes. Set aside.

Melt the butter in a large saucepan and fry the onion for 4 minutes until soft. Add the flour and fry for another minute, then add the vegetable stock, beans, potatoes, bay leaf, and summer savory.

Bring to the boil, cover and simmer for 10 minutes, until the vegetables are cooked through.

Meanwhile, slice the Mettwurscht sausages.

After 10 minutes, add the Mettwurscht slices and cook for another 5 minutes.

Stir in the cream and divide the soup among four plates; serve immediately.
